Field Blend -
Our 2018 Field Blend is a wild co-ferment of Riesling and Sauvignon Blanc. Hand picked fruit was basket pressed before extended lees contact over winter.
Aromatics of yuzu citrus and white blossom are followed by a palate of pink grapefruit and vibrant lemon pith. Wet stone minerality adds complexity to finish.
Pinot Gris -
Our 2019 Pinot Gris was inspired by skin contact whites from North-Eastern Italy. Hand picked grapes underwent carbonic maceration before basket pressing and wild fermentation in barrel and tank.
A textural, copper hued Pinot Gris with concentrated spiced pear and blood orange. Soft savoury nuances with a gentle, lingering finish.
Chardonnay -
Fruit was hand picked and whole bunch pressed to French Oak then kept on full solids for wild fermentation. The wine is un-sulphured during winter to build complexity and palate weight before racking and light fining. Bottled the following spring, unfiltered.
White flowers, green apple and spice lead into stone fruit, fresh citrus and French oak backed by classic Tasmanian acidity.
Pinot Noir -
Our 2019 Pinot Noir was naturally fermented with 40% whole bunch. 28 days on skins before basket pressing to seasoned French oak for 18 months.
A complex Pinot Noir showing raspberry, blood plum and ground clove. A lifted palate of dark cherry and pomegranate leads into a savoury texture with fine grain tannins.
